This product is made by mixing of "Moromi no shizuku" and 'koji', which is made by rice harvested in Toyama prefecture. Toyama is located next to our prefecture. 'koji' is Koji-mold that is bred from steamed grains, like rice and wheat. 'miso' and 'soy sauce' cannot be made without 'koji'. Recently 'koji' has become widely used as a seasoning. By mixing soy sauce with 'koji', you can enjoy the savory taste of soy sauce and the sweetness of 'koji' at the same time. 'koji' can also help with your everyday cooking needs. 'koji' has the power to make meat and fish softer and also to make taste better. You can use this product for any kind of food. The salt content of this product is about 12%, for your reference, generally soy sauce is about 16%.
